Spiced Cauliflower Mash
Cauliflower is a brilliant option if you’re trying to avoid piling on the pounds this festive season. The vegetable contains a host of B vitamins, which are essential for fat, protein and carbohydrate metabolism. It’s the aromatic spices however that allow the mash to taste indulgent and
decadent.
Turmeric and cumin taste like spiced oranges and lemons, and ginger is the perfect winter ingredient. Not only does it remind us of gingerbread houses- the ultimate Christmas treat- the root is packed with antioxidants that ward off a winter cold.

Ingredients
2 tbsp olive oil
1 large onion, finely chopped
10cm piece fresh ginger, finely chopped
1 tsp turmeric
2 tsp ground cumin
2 tsp ground coriander
2 cauliflowers, broken into florets
2 large floury potatoes, peeled and chopped
600ml vegetable stock
100ml crème fraîche
Method
1. Heat the olive oil in a large saucepan. Add the onion and cook for 3–4 minutes then stir in the ginger and spices and cook for a further minute.
2. Tip in the cauliflower and potato and toss well to coat in the spices and onion mixture. Pour over the stock, cover and simmer for about 15 minutes until the vegetables are very tender. At this point the stock will have reduced by half.
3. Add the crème fraîche and mash, using either a potato masher or a fork, until you have a rough-textured creamy mash.
