Buttermilk Pancake Stack with Cherries and Chocolate Drizzle
Here at Nutrition Rocks we're all about the 80:20 rule so a little bit of what you fancy is always a good idea - which is why we've chosen the lovely Dean Edwards delicious pancake recipe to share with you all on this pancake day, from his book 'Feel-Good Family Food'...
Dean is a likeable, well known face on the foodie scene, he came runner up in BBC Masterchef Goes Large (2006), going from 'digger driver' to chef and now a firm favourite on ITV's 'Lorraine' since 2010, creating family friendly cooking dishes.
Buttermilk Pancakes with Cherries and Chocolate Drizzle (serves 4)
- 240g self raising flour
- 1 tsp bicarbonate of soda
- 90g golden caster sugar
- 284ml buttermilk
- 3 small eggs beaten
- 50g butter melted
- 200g cherries halved and stoned
- 70g 70% cocoa content dark chocolate
Method:
1: In a large bowl sift in the flour, bicarbonate of soda, and sugar, meanwhile whisk together the eggs and buttermilk, add this to the dry ingredients and whisk together before mixing through the melted butter. Heat a large non stick pan over a medium heat then add in a small knob of butter, place four small ladles of the batter into the pan then leave to cook for around 2 minutes, flip then cook for a further couple of minutes. Repeat until you have used up the batter. Keep the other pancakes in the oven to keep warm.
2: break the chocolate into small pieces then place into a bowl over gently simmering water until melted.
3: Stack up the pancakes on a serving plate, scatter over some of the cherries then drizzle over some of the melted chocolate.
