Coconut Power Porridge With Vanilla Blueberry Compote

Serves 2

Cooking time: 5 mins

Ingredients:

Compote-

100g blueberries

1 dsp Clearspring Rice (or Barley) Malt Syrup

¼ tsp vanilla extract

½ tsp Clearspring Coconut Oil

¼ tsp Clearspring Kuzu, dissolved in 1 dsp water

Porridge-

½ pack / 80g Clearspring Power Porridge

300ml coconut milk drink

1 tbsp coconut oil

Method:

Compote-

Place the blueberries, malt syrup, vanilla extract and coconut oil in a pan, and bring to a gentle simmer over a low heat. Add a drizzle of water to make a sauce. Gently stir until the blueberries are soft and have released their juices.

Remove from the heat and stir in the kuzu mixture. Return to the heat and bring to a simmer, stirring all the time until the sauce is thickened and is glossy.

Porridge-

Mix all the ingredients in a small pan and bring to the boil. Cook for 5 minutes stirring occasionally.

Served topped the compote and a sprinkling of chia seeds.
