OVERNIGHT CHIA OATS WITH PLUM COMPOTE

A delicious breakfast is my ultimate wake up call, and you’ll be wanting to jump straight out of bed to get your spoon into one of these yummy pots!

You can make a few portions of the chia oats and leave in the fridge for up to a week, the plum compote will last a similar about of time too - but I very much doubt that you’ll have any left by then…

To make the Plum Compote you will need:

• 350g plums, stones removed (generally a punnet of plums)

• 1/2 tsp of ground cinnamon

• 2 tbsp of brown sugar

• 1/4 tsp of vanilla extract

• 4 tbsp of water

 

METHOD

Remove the stones from the plums and chop into small bite size pieces, add everything to a pan and gently heat for 5 - 10 minutes stirring occasionally. As the plums begin to soften use the back of a spoon or fork and squish the plums until a compote forms. 

Leave to cool in the pan and then transfer to a glass jar or airtight container.

Overnight Chia Oats
Ingredients

• 45g of oats (gf if needed)

• 1 tbsp of chia seeds

• 1/8 tsp of ground cinnamon

• 175ml of milk (almond milk works great)

 

How

Add the ingredients to a jar or bowl and simply stir together until mixed. Leave in the fridge overnight or for at least 2 hours.

Next the fun part… start layering up your breakfast! Add a spoonful of chia oats to a jar, top with yogurt (I like to use almond yogurt) and then a spoonful of plum compote. Keep going until your jar is full to the brim, top with a few frozen berries and seeds.
