Yondu Avocado Goddess Salad

Yondu effect: Created depth to an everyday salad  

 

Ingredients

  • 1 avocado

  • 3 tsp water

  • 2 tsp Yondu Vegetable Umami

  • 2 tsp Lemon Juice

  • Fresh mixed herbs (such as dill, parsley, coriander, tarragon), coarsely chopped

  • 1 Head of lettuce (300g) washed and chopped

  • 500g your favorite vegetables to grill 

 

Method

  1. Combine Avocado, Yondu Vegetable Umami, water, lemon juice and herbs; puree until smooth

  2. Dress a plate of crunchy greens such as iceberg or romaine. Top with additional avocado and red onion if desired

 

Notes/tips: 

You can prepare this recipe in advance, but just have the precaution to blend in the avocado at the last minute to keep all its freshness and colour.
