Yondu Avocado Goddess Salad

Ingredients
1 avocado
3 tsp water
2 tsp Yondu Vegetable Umami
2 tsp Lemon Juice
Fresh mixed herbs (such as dill, parsley, coriander, tarragon), coarsely chopped
1 Head of lettuce (300g) washed and chopped
500g your favorite vegetables to grill
Method
Combine Avocado, Yondu Vegetable Umami, water, lemon juice and herbs; puree until smooth
Dress a plate of crunchy greens such as iceberg or romaine. Top with additional avocado and red onion if desired
Notes/tips:
You can prepare this recipe in advance, but just have the precaution to blend in the avocado at the last minute to keep all its freshness and colour.
