Paysan Breton Avocado Toast with Everything Bagel Seasoning

Ingredients

Cooking time: 5 minutes

 

For the ‘everything bagel’ seasoning:

2 tbsp poppy seeds

1 tbsp caraway seeds

1 tbsp white sesame seeds

1 tbsp black sesame seeds

1 tsp flaked sea salt

 

For the toast:

1 clove of garlic

2 thick slices of sourdough bread

Extra virgin olive oil

1 large, ripe avocado – halved, peeled and destoned

Juice of ½ lemon

Salt and pepper, to taste

150g Paysan Breton French Garlic & Herb cream cheese

Handful of fresh dill

 

What to do:

  1. First make the everything bagel seasoning - lightly toast the poppy, caraway and sesame seeds. Mix with the salt and set to one side. 

  2. Slice the garlic clove in half and rub all over the sourdough slices. Toast in a griddle pan with a little extra virgin olive oil. 

  3. Add the avocado halves to a bowl and mash with the lemon juice and olive oil. Season to taste, then spread onto each toast. Add a thick layer of the cream cheese on top.

  4. Serve with a generous sprinkle of the everything bagel seasoning and some dill leaves.
