Warm Isle of Wight Tomatoes Bloody Mary

Serves: 4

Preparation time: 20 minutes

Cooking time: 10 minutes

 

You’ll need:

500ml Isle of Wight Tomato juice

500g Isle of Wight cherry vine tomatoes

200ml vegetable stock

4 sticks celery, 2 chopped, 2 to serve

2 tsp sugar

1 lemon, zest and juice

Salt

200ml vodka

2 tsp Tabasco sauce

What to do:

  1. Bring the tomato juice, cherry tomatoes, stock, chopped celery and sugar to the boil in a pan, simmer over a low heat for approx. 10 mins.

  2. Remove the celery and blend the mixture until smooth.

  3. Pass the tomato juice through a sieve and return to a low heat.

    For the rim salt:

  4. Pour 1tbsp lemon juice onto a plate and the salt onto a second plate.

  5. First dip the rim of the glasses into the lemon juice, then into the salt.

  6. Stir the vodka, lemon zest, lemon juice and Tabasco into the tomato juice.

  7. Pour into glasses and add the reserved celery sticks.
