CARAMELISED FIG & HAZELNUT PORRIDGE
This hearty bowl of porridge is packed full of comfort, sweetness and nuttiness- the best components for an autumnal breakfast.
Top tip: roasting the hazelnuts gives a much sweeter and nuttier taste- roast in the oven for about 10-12 minutes or until golden.
Ingredients
Serves: 1
50g porridge oats
150ml hazelnut milk @rudehealth (or milk of choice)
50ml water
2 ripe figs 1tsp honey
1tsp chia seeds
1tbsp hazelnut butter
A handful of hazelnuts- toasted (very important!)
A handful of fresh blueberries
Method
Prepare the figs as desired- you could roast, grill or leave them fresh as they are- all options work well! Roast in the oven or grill for about 10-12 minutes until golden and bubbly.
Meanwhile, add the oats, chia seeds and milk and water into a small saucepan. Bring to a boil, stirring continuously, then reduce to a simmer. Cook low and slow for around 6-8 minutes, stirring frequently.
Add the blueberries to a small microwaveable dish or ramekin and heat in the microwave for 30 second. Check, stir and reheat for a further 30 seconds until the juices start to release.
Once the oats are cooked to your desired consistency, pour them into a bowl. Drizzle over the hazelnut butter and add the blueberries along with their juices.
Top with the figs, a generous drizzle of honey and some crushed hazelnuts. Oh, and an extra drizzle of nut butter!
