CARAMELISED FIG & HAZELNUT PORRIDGE

This hearty bowl of porridge is packed full of comfort, sweetness and nuttiness- the best components for an autumnal breakfast. 

Top tip: roasting the hazelnuts gives a much sweeter and nuttier taste- roast in the oven for about 10-12 minutes or until golden.

Ingredients

Serves: 1

  • 50g porridge oats 

  • 150ml hazelnut milk @rudehealth (or milk of choice) 

  • 50ml water 

  • 2 ripe figs 1tsp honey 

  • 1tsp chia seeds 

  • 1tbsp hazelnut butter 

  • A handful of hazelnuts- toasted (very important!) 

  • A handful of fresh blueberries

Method

  1. Prepare the figs as desired- you could roast, grill or leave them fresh as they are- all options work well! Roast in the oven or grill for about 10-12 minutes until golden and bubbly. 

  2. Meanwhile, add the oats, chia seeds and milk and water into a small saucepan. Bring to a boil, stirring continuously, then reduce to a simmer. Cook low and slow for around 6-8 minutes, stirring frequently. 

  3. Add the blueberries to a small microwaveable dish or ramekin and heat in the microwave for 30 second. Check, stir and reheat for a further 30 seconds until the juices start to release. 

  4. Once the oats are cooked to your desired consistency, pour them into a bowl. Drizzle over the hazelnut butter and add the blueberries along with their juices. 

    Top with the figs, a generous drizzle of honey and some crushed hazelnuts. Oh, and an extra drizzle of nut butter!
