BAKED PLUM & ALMOND BUTTER PORRIDGE

Nothing beats a warming bowl of porridge on a cold winters morning. And this cosy bowl of creamy oats is topped with deliciously sweet plums and salted almond butter for a tasty start to the day.

Ingredients

Serves: 1

  • 50g oats 

  • 150ml almond milk 

  • 50ml water 

  • 2 ripe plums 

  • 1tsp chia seeds 

  • Toasted almond flakes 

  • A sprinkle of hemp seeds 

  • 1tbsp almond butter @Yumellofoods 

Method

  1. Preheat the oven to 170C. Slice the plums in half and remove the stone. Place on a baking tray and bake for 15 minutes- (I have previously roasted the plums the night before then reheated them the next day, saves time when you’re hungry in the morning!) 

  2. Meanwhile, prepare the porridge by adding the oats, chia seeds, milk and water to a small pan. Bring to a boil, stirring continuously, then reduce to a simmer. Cook low and slow for around 6-8 minutes, stirring frequently. 

  3. Once the plums are looking juicy and caramelised, remove from the oven and pour into a small dish along with the juices. 

  4. Once the oats are cooked to your liking, remove from the heat and pour into a bowl. 5.Dollop a spoonful of almond butter onto the oats then add the plums on top. Spoon over the plum juices, a sprinkle of flaked almonds, hemp seeds and an extra drizzling of almond butter.
