Tropical Quinoa Oatmeal
Serves: 2
Time: 20 minutes
You’ll need:
A third of a small pineapple, sliced
1 cup oats, uncooked
1 cup quinoa, uncooked
200ml water
450 milk (almond used)
1 banana, mashed
Buds from 2 sprigs of thyme
3tbs desiccated coconut
2tspn nutmeg, 1tbsp cinnamon, 2tspn ginger (all ground)
Sweetener of choice
Quarter cup cashews, chopped
Zest of half a lime
What to do:
Place the pineapple into a in heated griddled skillet if you have one. Any other frying pan will suffice. Leave to caramelise on each. side, checking after every few minutes. Add a touch of spices if desired.
Meanwhile add oats to a heated pot and leave to toast for 2-3 minutes over a medium heat. Follow by adding water* and the thyme.
Add the banana into the oats. Bring to the boil and reduce, followed by the addition of the quinoa, milk, desiccated coconut, sweetener and spices. Leave to cook through and become thick and creamy.
Check for taste.
Once ready, serve up, and sprinkle further desiccated coconut, lime zest and chopped cashews.
*I use a mix of water and milk sometimes but use whichever you prefer.
