Chantenay carrot creamy coleslaw

Serves: 2 (or 4 as a side dish)

Preparation time: 15 minutes

 

You’ll need:

 

4 tbsp mayonnaise

2 tbsp lemon juice

1 tbsp Dijon mustard

2 tbsp of chopped parsley

½ red cabbage, trimmed and shredded

2 echalion shallots peeled and sliced

120g Chantenay carrots, sliced

 

What to do:

 

Mix the mayonnaise, lemon juice, mustard and parsley together.

 

Either arrange the vegetables on a serving plate and drizzle the dressing over OR mix all the vegetables and dressing together and serve in a large bowl.
