Greek Salad
Enjoy this classic Greek salad with dreamy vegan βfetaβ π
Serves: 2-4
Preparation Time: 10 minutes
Ingredients
- Β½ cucumber, halved lengthways then sliced 
- 1 green bell pepper, roughly chopped 
- 200g (approx.) cherry tomatoes, halved 
- 1 red onion, very finely sliced 
- 70g-100g Kalamata olives 
- 100g vegan Greek-style cheese (our favourites are Violife and Green Vie) 
- Handful croutons (optional) 
- Handful fresh mint or oregano, stalks removed and finely chopped (use extra for decoration β optional) 
- 4 tbsp of Greek salad dressing 
Method
- Mix all ingredients together in a salad bowl and add the dressing. Taste and add some salt and black pepper if necessary. 
- Enjoy with spanakopita and tzatziki π 
Optional decoration: fresh mint, fresh oregano, toasted seeds (eg pumpkin, sunflower), cracked black pepper
