Greek Salad
Enjoy this classic Greek salad with dreamy vegan βfetaβ π
Serves: 2-4
Preparation Time: 10 minutes
Ingredients
Β½ cucumber, halved lengthways then sliced
1 green bell pepper, roughly chopped
200g (approx.) cherry tomatoes, halved
1 red onion, very finely sliced
70g-100g Kalamata olives
100g vegan Greek-style cheese (our favourites are Violife and Green Vie)
Handful croutons (optional)
Handful fresh mint or oregano, stalks removed and finely chopped (use extra for decoration β optional)
4 tbsp of Greek salad dressing
Method
Mix all ingredients together in a salad bowl and add the dressing. Taste and add some salt and black pepper if necessary.
Enjoy with spanakopita and tzatziki π
Optional decoration: fresh mint, fresh oregano, toasted seeds (eg pumpkin, sunflower), cracked black pepper
