Sweet Soy Chicken and South African Peach Skewers
Serves: 4
Ingredients
- 3 tbsp sweet soy sauce (ketjap manis) 
- 1 tsp garlic paste 
- 1 tsp ginger paste 
- 1 tsp cumin seeds or ground cumin 
- 1 tsp chili powder 
- 1 tsp sesame oil 
- Juice ½ lemon 
- 1 kg skinless, boneless chicken breasts or thighs, cut into pieces 
- 3 ripe South African peaches, cut into pieces 
- 1 large red onion, cut into chunks 
- Cooked basmati rice and salad, to serve 
Method
- Combine the sweet soy sauce, garlic paste, ginger paste, cumin, chilli powder, sesame oil and lemon juice in a bowl (not metal). Add the chicken pieces and toss together, then cover and refrigerate. Leave to marinate for several hours (overnight if possible). 
- When ready to cook, preheat the grill to medium-high. 
- Thread the chicken, peaches and onions onto skewers. 
- Grill for approximately 12-15 min, turning halfway through, and brushing with more marinade as they cook. Check that the chicken is thoroughly cooked (the juices should run clear). 
- Serve with basmati rice and salad.
