Strawberry Wreath

Ingredients

  • 600g strawberries, at room temperature

  • 80g dark chocolate

  • 80g milk chocolate

  • 80g white chocolate

To Decorate

  • Chopped pistachio nuts, hazelnuts or almonds

  • Desiccated coconut

  • Candied Orange Peel

  • Bay leaves, rosemary sprigs, mint or sage leaves, bow to decorate

Method

1. Melt the different chocolates in separate bowls by placing in the microwave for 30 seconds at a time, stirring and returning for repeat 30 seconds slots until smooth and glossy. Alternatively, place the bowls of chocolate, one at a time, over a pan of simmering water and melt, stirring until smooth. Carefully take off the heat.

2. Line a baking tray with parchment or a reusable silicon sheet. Arrange the decorations in separate bowls or plates. Dip whole strawberries into melted chocolate then sprinkle over a decoration. Set aside on the baking tray to set. You can vary your combinations of chocolate and decorations however you fancy.

3. The strawberries usually set at room temperature within 10 minutes. Alternatively, store them in a cool place until ready to serve. You can prepare them up to 6 hours beforehand and keep them in a cool place (if stored in the fridge they will have condensation when taken out).

4.Arrange a rough ring of greenery on a large platter or board in a circular shape, pile on the strawberries, adding in extra bits of green herb to decorate. Add a big bow somewhere on the wreath to finish the effect.
