PEACH & NECTARINE TRAY BAKE
South African peaches and nectarines give this delicious cake a lovely twist, full of flavour and natural sweetness ad. This @southafricanfruit traybake also light, fluffy & surprisingly refreshing. Why not serve it with tea or even a scoop of ice cream, plus they’re shipped to the UK, helping to reduce the carbon footprint.
Ingredients
- 60 ml smooth nut butter 
- 125 g thick vegan yoghurt 
- 120 ml almond milk 
- 150 ml maple syrup or agave 
- 2 tsp vanilla extract 
- 2 nectarines 
- 2 peaches 
- 240 g all purpose flour 
- 80 g ground almonds 
- 1 tsp baking powder 
- ½ tsp baking soda 
- 1½ tsp cinnamon 
- 2 tsp ground ginger 
Method
- In a large bowl, mix nut butter and vegan yoghurt with a wire whisk until smooth. 
- Whisk in almond milk and then agave. 
- Finally mix in vanilla extract. 
- Add flour, ground almonds, baking powder, baking soda and spices. Mix really well. 
- Transfer the batter into a baking tin, spread it evenly and decorate with fruit segments. 
- Bake for about 30-35 min at 180C until the knife comes out clean. 
- Glaze the top with agave.
