Fluffy pancakes with smoked salmon
The pancake is an essential part of brunch, and can be prepared in an infinite number of ways. For a soft, light version, try this recipe for fluffy pancakes made out of egg whites which have been whisked until firm, and then cooked at a low temperature. Garnish with a fresh herb fromage frais and smoked salmon.

Ingredients
(for 4 people)
For the pancakes
- 100g flour 
- 1 sachet (11g) of baking powder 
- 2 egg yolks 
- 4 egg whites 
- 20cl milk 
- 5g sugar 
- 1 pinch of salt 
For the topping
- Fromage frais 
- Fresh herbs: chervil, dill and chives 
- Fleur de sel 
- Freshly ground pepper 
Method
For the fluffy pancakes
- In a bowl, mix together the egg yolks, milk and flour until smooth. 
- Beat the egg whites until stiff with a pinch of salt. 
- Add the baking powder and sugar little by little, and then whisk until stiff. 
- Slowly add the egg whites to the mixture with the egg yolks. 
- Put a ¼ of the mixture in a non-stick frying pan (do not add any fat). 
- Cover and cook over a very low heat making sure not to turn the pancakes over. To check that they are cooked, put a knife into one of the pancakes. The blade should come out clean. 
For the topping
- Finely chop the fresh herbs. 
- Beat the fromage frais with the fresh herbs, then season with salt and pepper. 
- Place a spoonful of the herb cream on each pancake, and then add a slice of smoked salmon. 
- Serve immediately and enjoy!
