Mini South African Plum Tarts with Cashew Cream and Ice Cream

Ingredients

For the cashew cream:

  • One cup cashews, soaked 4-6 hours and drained

  • 1/3-1/2 cup filtered water

  • 1-2 tbsp maple syrup

  • 1 tsp vanilla extract

 

For the tarts:

  • One pack vegan ready-rolled puff pastry

  • 6 South African Plums, sliced

 

For the cinnamon sugar:

  • Mix 2 tbsp coconut sugar with

  • 1-2 tsp cinnamon

 

To brush pastry:

  • 1 tbsp coco milk mixed with 1 tsp maple syrup

 

Method:

  1. Preheat oven to 180C. Blend soaked cashews with remaining ingredients to form a sweet cream cheese. Set aside.

  2. Cut large circles of puff pastry, then add to a large lined baking tray.  Leaving a gap around the edges, add one tablespoon of cream cheese. Top with sliced plums, then sprinkle the cinnamon sugar over the top of each.

  3. Brush any expose pastry with the milk and maple mixture, then bake tarts until golden and plums are soft (mine took 23 mins, but check at 15). Enjoy warm with ice cream
