CHERRY BAKEWELL OVERNIGHT OATS
A simple make-ahead breakfast with maximum flavour- creamy oats topped with juicy cherries and oozing with rich almond butter, this breakfast will sure get your tastebuds dancing in the morning.
Ingredients:
Serves: 1
50g oats
1 tbsp Greek yogurt
150ml almond milk
1 tsp chia seeds
A handful of frozen cherries
A handful of fresh cherries
1 tsp honey
1 tbsp crunchy almond butter
A handful of flaked almonds, toasted
Method
The night before serving, combine the oats, milk, yogurt and chia seeds in a jar - add a dash of water if it looks too thick.
Place in the fridge overnight.
The next morning, loosen the mixture with more milk or water if necessary and give everything a good stir.
Pour the mixture into the bowl.
Meanwhile, stew the frozen cherries, either in the microwave or on the hob, for a couple of minutes to soften and add a dash of honey.
Pour the cherries onto the oats and add the fresh cherries, sliced with stones removed.
Drizzle with crunchy almond butter and the flaked almonds.
