CHILLI & PAPRIKA PRAWN SKEWERS WITH A MANGO SALSA
Spicy prawns paired with a cool & refreshing mango salsa, this meal balances sweet n’ spicy for a deliciously fresh summer appetiser
Ingredients:
For the mango salsa:
½ mango, diced and finely chopped into small cubes
½ red pepper
A handful of cherry tomatoes
½ large red onion
1/3 cucumber
½ lime juice
Fresh mint, chopped
1 pack of king prawns, ready to eat
For the marinade:1tbsp tomato puree
11/2tsp smoked paprika
1/2sp chilli powder
1/2tsp dried chilli flakes
1/2tsp ground cumin
1tsp onion powder
1tsp garlic, minced, or garlic puree
1/2tsp coriander, finely chopped
Drizzle of olive oil
Salt and pepper
Method
1. Add all the marinade ingredients into a small bowl and mix well.
2. Add the prawns and thoroughly coat in all the marinade
3. Leave in the fridge for about 2 hours before cooking.
4. To make the salsa, finely chop all the ingredients into little chunks and add to a small bowl. Add the lime juice and stir. Set-aside in the fridge until ready to plate up.
Tip: wet your wooden skewers before grilling to prevent burning.
5.Once ready to cook, slide the prawns onto the skewers and fry or bbq for just a couple of minutes, turning half-way through to heat them through thoroughly (if using pre-cooked prawns).
6.Spoon the salsa onto a plate and place the skewers on-top.
Finished with some crushed peanuts for some crunch
