Radish and soft cheese canapés

This recipe is a twist on Twarozek, a typical Polish dish made of curd cheese mixed with chives, radish, cream and spices. However, in this recipe it’s transformed into a tasty canapé, perfect for dinner parties or drinks with friends.

Serves: 16

Preparation time: 5 minutes

You’ll need:

for the topping

16 radishes

Bunch of chives finely chopped

4 tbsp Ricotta

4 tbsp Sour cream

Black pepper and sea salt

Toasted French baguette

Paprika

 

What to do:

 1. Set aside four radishes.

2. Grate the remaining 12 radishes and place in a bowl alongside the ricotta, sour cream and chives.  Stir well to combine and season with black pepper and sea salt, taste and adjust the seasoning if necessary.

3. Slice the baguette into small crostini size pieces then place on a baking tray and drizzle with olive oil. Place in a pre-heated oven (200°C) and bake for 10-15 minutes until crisp and golden. Remove from the oven and cool on a wire rack.

4. Once the crostini’s have cooled, spoon the radish mixture onto each piece.

5. Slice the remaining radishes and chives and add to the top of each crostini, then sprinkle with a little paprika and serve.
