Ultimate Radish Burgers
Ingredients
Serves: 4

Cooking: 10 minutes
For the pickled radish:
6 radishes, sliced
2 tbsp red wine vinegar
2 tbsp sugar
For the burgers:
1 onion, peeled and finely chopped
6 radishes, finely chopped
Olive oil
500g beef mince
Salt and pepper
A handful of Parmesan cheese, grated
1 heaped tbsp Dijon mustard
1 large egg
100g breadcrumbs
4 burger buns
For the radish mayo:
100g mayonnaise
Zest and juice of half a lemon
2 radishes, finely sliced
Salt and pepper
To serve:
Lettuce
Fries
Method
Make the pickled radish. Mix together the sugar and vinegar, add the radishes and season. Set aside.
Start the burger patties. In a large frying pan, slowly cook the onion and radishes in a drizzle of olive oil, until soft and then leave to cool.
Put the mince in a large bowl and add the seasoning, Parmesan, mustard, egg and half the breadcrumbs. Mix well.
Add the cooled onion and radish mixture and mix again.
Shape the burgers into 4 patties and refrigerate for at least 30 minutes before cooking.
Mix together the mayo ingredients and put to one side.
Heat a little oil in a pan on a medium-high heat and fry the burgers for around 8-10 minutes, turning occasionally.
Build the buns with the lettuce, burger and mayo, topping with the pickled radishes and serve with fries.
