Roasted Red Pepper & Tomato Soup

Soup - the ultimate winter warmer! This flavour combo is an absolute favourite, packed with sweet red peppers, juicy tomatoes, and sweet potatoes to add that extra thickness and creaminess.

Ingredients:

Makes: 3-4 portions

  • 2 red bell peppers

  • 6 large vine plum tomatoes

  • 1 large sweet potato, peeled

  • 1 red onion

  • 2 large garlic cloves

  • 450ml veg stock (approx.)

  • Olive oil

  • 1 tbsp smoked paprika

  • A handful of fresh basil, finely chopped

  • Salt & pepper

Method:

  1. Preheat the oven to 200C.

  2. Slice the sweet potato, pepper and red onion into medium sized chunks and place onto a large baking tray.

  3. Add the tomatoes and garlic cloves, both whole, and generously toss with olive oil, salt and pepper - roast in the oven for about 30mins.

  4. Remove the veg from the oven and transfer everything into a large, deep frying pan. Bring to a medium-high heat and add the veg stock, paprika and chopped basil. Bring to the boil and reduce to a simmer for 5 mins until fully softened. Season to taste.

  5. Blitz everything together until silky smooth and serve!

Serving suggestion: Top with some cracked black pepper, fresh basil and serve with crispy croutons!
