AVOCADO TOAST WITH HARISSA POACHED EGGS & MINT YOGURT

Spice up your #toasttuesday with this classic avocado toast topped with golden yolks infused with rose harissa paste and a refreshing mint yogurt

Ingredients:


Bread of choice- I chose sourdough
½ avocado
2 eggs
1tsp harissa, or to taste
Pumpkin seeds
For the yogurt:
1tbsp Greek yogurt
1tbsp fresh mint leaves, finely chopped
Squeeze of lemon
Pinch of salt
Dash of water
Mix these ingredients together

A simple method:


1.Mash your avocado and add a squeeze of lemon, salt and pepper- set aside
2.Bring a pan of salted water to a boil then lower to a rolling simmer. Drop in your eggs and allow to poach for 3 minutes
3.Toast your bread & spread over the smashed avocado
4.Check that the eggs are done to your liking and remove from the pan. Place on top of the toast.
5.Spoon over the harissa paste and drizzle over the yogurt.
Finish with a sprinkle of pumpkin seeds and your good to go!
