Sweet Banana Bread

INGREDIENTS

• 2 ripe bananas, mashed

• 1 egg

• 100g of yogurt

• 80ml of milk

• 250g of self raising flour

• 200g of dried mixed fruit

• 100g of dark brown sugar

• 1 tsp of mixed spice

• 1 tsp of baking powder

Preheat the oven to 180°c. Mash the bananas with the back of a fork until puréed. Add all of the ingredients to a large bowl (weighing as you go along) and gently fold together until mixed thoroughly. Spoon into a lined or greased loaf tin and bake for 50 minutes. Try not to eat it all at once!
