Blood Orange Chia Pudding

 

It’s January, and after the excesses of December and sudden cold snap, our immunity can feel a little low.

The best way to combat tiresome colds and get your glow back is to stock up on vitamin C and zinc rich foods.  Blood oranges are a fantastic course of vitamin C. The red pigment makes sure they’re rich in anthocyanins- antioxidants that fight free radicals, cause ageing and lower our immunity.

Chia seeds are a great source of zinc, which is crucial in building up antibodies in response to infection, as well as its role in enzyme production essential for healthy digestion. A healthy digestive system plays a key role in immunity.

A great way of eating these two flu repellers is combining them in a very simple protein rich blood orange chia pudding recipe. This recipe takes seconds to make and you will find it refreshing and nourishing.

Method:

  • Blend the whole peeled orange until smooth

  • Add the chia seeds and stir in

  • Leave to sit for 30 minutes until set

  • Serve with a slice of orange

Ingredients:

  • 1 blood orange (or regular orange)

  • 1 tablespoon of chia seeds
